Because that doesn't show it from the angle Sky did, which was situated behind Son in a direct line with Eriksen. It clearly shows the ball was heading directly at Son in the position he was at the time. It then shows the deflection changing the angle of flight by a few degrees. Had the deflection not occurred, Son would have had to check his run to receive it, slowing the momentum. As it was, the deflection meant that Son had to run on to the ball, meaning that he could outpace the defender.
It wasn't a perfect ball, but saying it was a fluke suggests that Eriksen wasn't aiming at Son. The deflection turned a good pass into a better opportunity, but calling it a fluke is incorrect.
