I believe its because between 2/1 and 3/2 there is 2.5/1 and odds aren't given in fractions aol they use 5/2 and even though the next step up is 3/1 they go back upwards for odds not to one hence 6/4.
Don't know why just customary I'm not sure I've ever seen 3/1 always been 6/4. That said I haven't bet foe years.
Interesting that bookies seem to be taking our ITK seriously though.

They may not be taking our ITK seriously... it is more likely that they have adjusted their odds due to a flurry of large bets from posters here!!

"2.5/1" isn't between 2/1 and 3/2 ... "2.5/1" is 5/2. the answer is there is no reason, it's just always been that way, it's a bookie "tradition" and they don't like change, even if it makes logical sense.
