Højbjerg has an underrated passing range, as the remarkable stat for number of high quality chances he has created shows. Bissouma is a dribbler, carrying the ball forward 15-20m himself à la Dembélé or Ndombele.
Højbjerg defends positionally, blocking off passing lanes and always positioning himself with regard to the defenders (another less obvious quality that leads to him being underrated). Bissouma defends with mobility, tackling, intercepting and disrupting the opponent in possession.
Thus it isn’t just about which is “better”, it’s about which has the skill set to counter the current opponent’s style and midfield quality.
