Asking the question because I'm genuinely not too sure what our best pairing would be (assuming we play a 4-2-3-1 formation which Poch seems to prefer).

Ok shit the poll is embarrassing as I posted the thread prematurely. How do I edit it?

Dembele/Sandro offers the best balance for me. Just hope that Pochettino can get the best out of Dembele.

A pairing that can protect the defense and pass the ball forward. Don't care who it is, as long as they do their job

The problem with Dembele is he doesn't pass the forward ball quick enough, which won't work on Poch's system as it will be come to slow like AVB's. If Poch can teach him to play with his head up, pass within 2 touches (most of the time) and play the occasional through and long ball he would be great, but I have my doubts.

Dembele/Sandro for away and counter attacking
Capoue/Hotlby for Home and trying to break down a stubborn defence.

Like I said, hopefully Poch makes him develop into the the player you just described. I agree with you, I just think he's a better option than Paulinho (still unsure on him), Capoue (too defensive to play with Sandro) or even Holtby (again, yet to be totally convinced).
